Caribbean diving

I'm going on a cruise 1/8/12 and would like to take in some of the underwater sites. The cruise is going to Roatan (Honduras), Belize City (Belize), Cozumel and Costa Maya (Mexico). All of the cruise-line sanctioned dive trips max out at 60 fsw. Anyone been to any of these places that could recommend something a little deeper? I'm looking for something in the 100-150 ft. range, twins, nitrox, etc. No trimix or deco certs, so those are out. Possibly rebreather demo or entry cave? I would like to see stuff that the "normal" excursions don't offer.
